GRAPES
Merlot, Cabernet, Pinot Noir
DISTILLATION
The pomace undergoes partial vacuum batch distillation in copper stills so that the volatile substances are extracted at a lower temperature, resulting in purer and more intense aromas than in a conventional distillation since they are subject to less thermal shock. Each grape is distilled separately. At the moment of the preparation of the blend for aging, the three distillates grappas are skilfully blended. The final blend rests for 14 years in barrels (3 years in cherry wood barrels and 11 years in oak barrels), some of them were previously used for Marsala and Passito wines or Brandy to enrich the aromatic and spicy notes.
SENSORY FEATURES
Complex grappa characterized by notes of cherry and red fruits hints of leather, tobacco and spices soften by scents of vanilla, dried fruits and raisins.

To fully appreciate it, taste it in Bolla glasses at a temperature of 18 20 C, accompanied with extra dark chocolate or with a good cigar
